Zucchini rolls with sheep cheese
Preheat the oven to 180 °C
Cut zucchini into 3 mm slices
You can do it with a sharp knife or vegetable peeler with a wider aperture
Place zucchini slices on a baking sheet with baking paper, brush it lightly with olive oil on both sides, salt and pepper – on one side is enough
Bake until soft, it takes about 20 minutes, when they start to brown take them out the owen
If you leave them baking longer, they would begin to dry and harden.
Meanwhile, in a bowl, combine sheep cheese Brynza, softened butter, thyme and pepper
If it´s too stiff, add a little sour cream, milk, yogurt…
Place a piece of cheese mixture on cooled pieces of zucchini, add radicchio and rucola leaves and roll up into rolls.
Serve alone or with fresh bread.
Prepare the zucchini on the grill.
