Yolk mousse

Have some yolks left over from another dessert? It´s a simple yet charming dessert.

Steps

Whisk egg yolks with sugar and a few drops of hot water until thick foam

Place a bowl with mousse over a pot with boiling water and whisk in the wine gradually, until solid foam

Remove from heat, add zest and whisk for a while, until foam cools down just a bit

It tastes the best still warm so serve immediately, preferably with fresh fruit.
