Sweet potato bread with feta cheese

Sweet potato bread is ideal for a long Sunday brunch.

Steps

Pre-heat your oven at 180°C. Toss the sweet potatoes with some olive oil, salt and pepper. Bake until soft, approximately 10 minutes

Add the yeast in 125 ml of lukewarm water, mix well and let it sit at a warm spot for 10 minutes until it starts to foam

Whisk two eggs, add onion, milk, rosemary, sugar, salt and mix well. Add yeast and let it rise at a warm spot until the dough grows twice its size. Approximately 1 hour

Add feta cheese crumbs and sweet potatoes. Take a baking tray size 10×20 cm and spread it with oil or butter to prevent from burning and sticking

Put in an oven at 160°C for about 1 hour. Let it cool off for ten minutes, then remove from baking tray
