Strawberry shortcake with curd and coconut is delicious and nutritious combination. It’s great as a dessert or breakfast. For Freshbedýnky prepared by Lenka Formánková from the blog 1000chuti.cz.
Blend a tablespoon of linseed, put it in a bowl and add hot water just to the edge of the ground seeds. Stir and let stand for five minutes, the mixture becomes thicker.
Cut or blend a quarter cup of unpeeled almonds together with half a cup of oatmeal and add to the linseed.
Cut half a cup of dates into small pieces. Add them to the bowl and mix everything together.
Put the grated coconut into a blender and mix it into finer pieces. Pour the coconut with a half cup of hot water and let stand for five minutes.
Meanwhile, mash less than 500 grams of strawberries. You do not need to sweeten well-ripe strawberries, if so, sweeten them with honey. Leave a few strawberries aside for decoration.
Mix the coconut mixture with a curd (250 g) and add a spoon of honey.
Now serve in glasses. At the bottom put mashed strawberries, then crumble the layer of dough from the flakes. Another layer is curd with coconut, again mashed strawberries, again curd with coconut. On top, you can crumble a little dough from flakes and decorate everything with chopped strawberries, sprinkle with a little grated coconut.
Cool in the refrigerator for one hour and serve.
