Sparassis soup style tripe
Clean the mushroom thoroughly before the heat treatment as the soil holds in the folds. Our best experience is to rinse it in several waters, and then let drain on a tea towel.
Shred or cut cleaned Sparassis into smaller pieces.
In a saucepan, melt butter, add crushed garlic, pepper, paprika and dried marjoram
Let the smell develop, add mushroom, pour broth and simmer on a moderate for 15-20 minutes, until mushrooms are softer
Season finally and serve.
* Diced root vegetables or potatoes fit the soup very well.
* Blended boiled potatoes can thicken the soup.
