Roasted peppers sauce

Steps

Preheat the oven to 190 °C.

Cut peppers in half and decore

Cut peeled shallots in half, peel the garlic

Place all on a baking tray with cumin and a few sprigs of rosemary, drizzle well with oil, salt and pepper, give it a stir

In the end, place the peppers peel up.

Bake until large dark blisters appear on the skin

Remove from oven, let cool for a moment and peel off skins of the peppers.

Place peppers, shallots and garlic into a blender.

“Flush” the baking tray with warm broth to get maximum flavor, especially of rosemary

Strain the broth into a blender and blend into a smooth cream

(It is better to pour the broth gradually, to obtain the desired consistency, so you don´t have to thicken the sauce with flour.)

We prepared about 8 servings of sauce from 1kg of peppers.
