Cook peeled asparagus in boiling salted water with a bit of butter and sugar for 2-3 minutes
Cool immediately in cold water and set asparagus aside.
You can prepare poached egg in the same water.
(Let water below the boiling point, tap out the first egg into a glass
You can then pour it into the water, or make a swirl in the water and pour the egg in the middle
The egg white becomes solid while the yolk remains liquid, it takes like 1-2 minutes.)
Make the dressing.
Prepare toasts as crispy as you like.
Start layering the toasts with garlic leaves, sliced avocado, asparagus, ham and poached egg
Sprinkle everything with the dressing, cut the egg so the yolk oozes out and serve immediately.
* Use sauce hollandaise or mayonnaise instead of the dressing.
