Raw cauliflower “couscous”

Cauliflower “couscous” is great as a simple dish or have it as a salad with grilled meat.

Chop cauliflower in a food processor or a blender until the consistency of couscous

Mix with quartered cherry tomatoes and finely chopped herbs

Season with salt and pepper, sprinkle with olive oil

Sprinkle with pine nuts.

Tip: Dry roast pine nuts in a pan

The meal won´t be completely raw, but this way it´s much more tasty.
