Steps

Zest lemons and squeeze the juice

Wash quinces and wipe PROPERLY to remove the hair

Cut them into small cubes, triangles, stripes, whatever 🙂 and together with lemon zest and juice, put it into a pot

Close with the lid, bring to a boil and cook until soft, if necessary, pour in a little water during boiling

If you want, you can mash it or make it a puree

Add the sugar, at first only 200 grams, then add more according to your taste and cook for 5 more minutes

If you added too much water or you prefer more jelly consistency, add the pectin teaspoon after teaspoon, stir well after each and do a test – scoop a small amount on a spoon, place it in the fridge for a minute and check

When you are satisfied with the consistency, fill clean glasses, cap immediately and allow to cool slowly, may be wrapped in blankets, it takes several hours.
