Pulled beef, mashed potatoes and roasted veg

Season your beef with salt and pepper. Dice your parsley, celery and carrots and put it in a casserole. Roughly cut your onions and garlic and add to your casserole altogether with thyme and bay leaf. Add some water too. Now take your seasoned meat, lay it over the veg, put a lid on and put in an oven at 220°C. Roast for about 3,5 hours. Turn the beef around a couple times during roasting and add water if necessary. Once the roast is finished, pull it apart with two forks. It should be super tender and easy
To make a gravy, separate the roast juice and put it aside. Take a pan, add butter and flour and make a dark roux. Then add the roast juice and boil for 20 minutes. Add water if necessary. Then add mustard, honey, rosemary and roman cumin
Cut your veg in halves or quarters. Mix well with oil and honey. Season with salt and pepper. Spread it over a baking paper in a casserole. Cut your Brussels sprouts and mushrooms in halves. Mix with a bit of oil, salt, pepper and thyme. Add to a casserole and put in an oven at 190°C. Bake until your veg gets golden brown
Boil your peeled potatoes in salted water. Then mash. Take a pan, add a spoon of butter and add your chopped spring onions. Then mix with your mash
