Parmesan bread in the eggs with spinach and asparagus

That’s how we think relaxed weekend breakfast looks like.

Two slices of bread take about one egg

Use one teaspoon of grated Parmesan cheese on one egg .

Grate the parmesan and whisk together with eggs, with a fork

Dip slices of bread into this mixture from both sides

Give them a moment to soak and fry slowly in the oil.

During frying peel the asparagus

Cut it into pieces and cook in boiling water, for about two minutes and strain.

Whisk well with a fork olive oil, mustard, vinegar, salt and a little pepper.

Wash and dry the baby spinach.

Serve the bread with spinach and asparagus

Drizzle with dressing and sprinkle with grated Parmesan.
