Homemade borscht
Unique take on borscht by Veronika of MySimpleDish. It is her grandmothers’ recipe – she would use any kind of vegetable, so it´s great for leftovers.
Steps

Boil your meat first with all the seasoning for circa 1 hour

Then add the vegetable – cleaned carrot, parsley, celery, celery stalks, onions and garlic. Boil until all the veg is soft

Drain the broth and dice your meat and vegetable

Peel your beetroots, grate it and fry it on a pan and oil until soft. Then add to your broth with meat and diced vegetable

Finally add beans. Season with salt and lemon juice. Decorate with spoonful of sour cream and enjoy
Tip
You can switch the beef for pork or even no meat
