Green asparagus with sweet potato puree and butter beans

Peel the sweet potatoes, cut them into larger cubes and cook on steam for 15 minutes. Mix the cooked sweet potatoes with coconut milk, a smaller spoon of salt (to taste) and a pinch of nutmeg.


Cut off the ends of the green asparagus (about two centimeters) and put it regularly on the baking paper. Add the olive oil and move the asparagus carefully to get the oil everywhere. Season asparagus with  salt and pepper. Put 4-5 circles of lemon on it. Bake for 10 minutes at 200 degrees according to asparagus thickness. The tips can be more baked to crunch perfectly.


Meanwhile, finely chop the spring onion, roast it in olive oil, season with salt and add the butter beans to warm up with the onion.


Serve a potato puree, baked asparagus with lemon and beans on a plate. Add the chopped cheese on top and sprinkle with parsley leaves.
