Curd pie with rhubarb, mint and coconut

Mix all ingredients for corpus and work it into a dough – then put in the fridge for 2 hours.


Now take it out of the fridge and roll it out 0,5 cm thick and form the pie crust. Pierce it with fork few times, cover with tin foil and put in some dried peas to prevent it from expanding. Then put it in an oven at 180°C and bake. After 10 minutes take off the tin foil with peas and bake for another 7 minutes.


Mix egg yolks and curd and whip it with mint, coconut and sugar. Then spread it around the corpus and decorate with rhubarb and put it in an oven at 160°C for another 40 minutes.
