A swordfish is on the tip of the culinary pyramid. It lives in warm streams of tropical seas. It can swim in a speed of 100 km/h which makes it one of the fastest fish. Its speed makes it difficult to catch. Therefore, swordfish is usually caught by fishing rod. Its meat is completely boneless and with it structure it reminds of veal – it is both firm and delicate. Great as a steak, may it be medium or rare.
