Beef sirloin is located on the lower part of cow’s back. It is a very lean cut of meat that contains maximum 3 - 4,5% of fat which makes it a premium and favorable piece. The price is a tell-tale of that. Sirloin steak is best on a heavy pan. If you’re about to make a thick piece of steak, quickly grill it on a super-hot pan on all sides, wrap it in an aluminum foil and let it finish in an oven at 200°C. Delicious.
