Microgreens are sprouts of herbs and vegetable. Once the seed gets to contact with water it sprouts. After 7-14 days first little leaves appear and it’s time to consume it. University of Maryland claims microgreens contain many times more nutrients, vitamins and minerals than fully grown plant. It is so because the sprouts act as a reservoir of vitamins, minerals, proteins and enzymes for the plant to grow. That way by consuming rather small amount of food you can get so much nutrients.
