Atlantic cod meat is very delicate and literally falls apart when cooked for too long. It is perfect for frying or roasting. Best prepare this fish with the skin on, it keeps it all together. Cod back meat is a true delicacy. Salted or dried cod is very popular in Europe and Scandinavia.

Cod is well known for its sensitivity. For instance, once the water temperature rises a bit they leave for colder waters.
