Baked pumpkin with rokpol and garlic

For 4 servings:
4 small pumpkins (about 10 to 13 cm)
1 cheese Mandava - about 200g (creamy cheese type)
80 g blue cheese (Rokpol, CZ: Niva)
1 / 2 pack sour cream
1 / 2 pack cottage cheese
pinch of salt and pepper
grated hard cheese
100 g couscous
6 cloves of garlic
butter
And how to do it?
Pour hot water over couscous, cover and let stand. Align the bottom of the pumpkins in order to stand straight. Cut off top cap them and scoop out the insides. Spread the butter on the walls inside. Cover the cap and put it on the baking pan greased with butter and off in the oven to 190 degrees, a total of 30 minutes.
Meanwhile, prepare the filling - mix creamy cheese (Mandava), blue cheese (Niva), sour cream, cottage cheese, salt, pepper and garlic and mix with couscous. Once the pumpkins are baked, fill them with cheese stuffing, sprinkle with grated cheese and put the cap. Give bake for 5 more minutes and then enjoy this culinary delight. It's really delicacy!
Baked pumpkin with pasta and tempeh
For 4 servings:
- 300 g organic pasta
- small pumpkin (or half of a large)
- 1 onion - about 150 grams
- 3-5 cloves of garlic
- 3 bigger carrots - about 250 grams
- 3 larger tomatoes - approximately 300 grams
- sea salt
- 1 package smoked tempeh
- a little oil
- Italian seasoning(spaghetti, curry or other favorite spices - imagination has no limits)
How does it work?
Cook pasta, pour off the water and leave it aside. Cut, scoop out and dice the pumpkin into cubes (leave it to a strong man), cut carrots into round pieces.
Fry onion in oil until golden brown, add the carrots and pumpkin, top with spices and finely chopped garlic and salt. Pour about 2-3 dl of water and simmer about 15 minutes under the lid.
Meanwhile, preheat oven to 170 degrees and lightly oil pan. Cut the tempeh and tomatoes into small cubes.
Then mix the pasta with the cooked vegetable mixture, tempeh and raw tomatoes. Put into baking pan and bake for about 25 minutes. And then the feast can begin :)
To be served with fresh salad.
