Fish you have from Tuesday till Thursday, but you deliver in my area on Monday. How can I order a fish?
It's easy. You will make an order with "messenger" delivery on Tue or on Wed. Or you can pick up your order in person at our shop in Smichov (again, Tue or Wed). Likewise it works with the chicken and lamb meat that we have on Wednesday and on.
Why is some of that meat available only from Wednesday till Friday?
We do our best to be flexible but there are things we can't tweak. It's difficult to convince a farmer who lives pretty far from Prague, to kill animals on the weekend (so that we would have it on Monday). He prefers to deliver to us on Wednesday. We are now trying to find different suppliers but the number of organic meat farms in the Czech Republic is very limited so it's not that easy. If we deliver in your area on a day when your favorite meat is not available, there is always an option how you can get it. (more in the question above).
Why can't I order meat to some pick-up points?
Not all the pick-up points are equipped with a refrigerated sanitary storage. Some of them are - esp. the Kindergarten Tetty and Kindergarten Nedvezi. To these two pick-up points you can order entire range of refrigerated goods and meat.
Are the fish and seafood caught wild or grown at a fish farm?
Most of the fish in our offer is caught wild. It means that it lived in the sea and was shipped to us in 36 hours after being caught. You will see a "wild" flag at such fish. Some of our fish were caught also ecologically, you will see and "wild & eco" flag. See more in a question below.
What does "ecological fishing" stand for?
Fish caught in the sea may have a certificate of ecological fishing. It means that at fishing the sea bottom is not damaged and that the quantity limits are obeyed in specific areas.
Can you degut and portion my fish?
All the fish in our offer are degutted, some of them are already cut in fillets. Details you will find in each fish description.
Why are there no organic fish?
The word "Organic" is used for growing of plants and keeping animals. Though, the sea fish live freely in the ocean and nobody can oversee them and certify their organic origin. Some of the fish are grown at a fish farm, these can be certified organic.
Are the fish frozen?
No. We receive them before 36 hours from the time of catching. The fish exuberate with freshness.
Why are your fish so high quality?
We deliver them extremely quickly to your hands. Freshness is the most important factor for the fish taste and we manage to get it to you faster than any hypermarket (even at the best ones, the fish is up to 10 days old, with us, it's never more than 2 days).
What is the meat origin?
Except for fish and seafood, all the meat is exclusively local - from the Czech Republic. The details you will find in the upper menu under "Our farmers bookmark" and also at each of the products.
How do the organic animals live?
The young bulls, chickens, sheep or swine have a free range run and forage freely, while they have a shelter to hide. They are fed by high quality organic food. More on each farm you will learn in the upper menu bookmark "Our farmers".
What is the difference between organic and regular meat?
It's especially in conditions the animals live in. For entire life they run freely outdoor. They live longer (up to five-times!) than regular cattle. They are fed by quality organic food. They don't receive ANY hormones (not even the growth hormones). A great difference is at the point of killing. Organic animals are killed at specialized organic slaughter houses, that boast of specific facilities. After transportation to the slaugher house, the animals keep running freely for few days. Only then they go to be killed - individually. One animal doesn't see another dying. That's why before death the animals don't excrete hormons (adrenaline, etc.) in their blood, the animal is peacuful and can pass away. Combining a quality meat specimen with natural and ethical living conditions the meat is of extremely high quality. It's taste, tenderness and softness is incomparable to the regular one. On top of that some of the meat varieties are "aged" - hung for 1-2 months at zero temperature - to achieve maximum meat quality.
What specimen are your young bulls?
It's Gasconne. It's a quality meat specimen that satisfies e.g. harsh requirements of the French cuisine - it was awarded by "Label Rouge". Not only specimen influences the quality of meat, it's also very important the living and killing conditions of the bull. That's why we offer the meat from the very best specimen grown by the best - organic - method.
What does "aged" meat mean?
Not always more fresh equals better. At meat it's true culinary value comes after some time. After killing, complex chemical processes take place in the meat. In the meantime, tenderness, water-binding capacity and other meat characterics are changing. That's why the beef is ripened after killing for cca 2 months. That changes completely the resulting relish, taste and it's preparation is easier and faster.
